Garlic Confit Hummus

Let's start with the basics: garlic confit hummus, inspired by Love and Lemons BEST Hummus recipe.


Recipe

Prep time: 10 minutes

Cook time: 45 minutes

Makes: Roughly 2 cups


Ingredients

Garlic Confit

1/4 cups extra-virgin olive oil

5 garlic cloves, peeled


Hummus

1½ cups canned chickpeas, drained and rinsed

⅓ cup tahini

4 tablespoons lemon juice (approx 1 lemon)

1 teaspoon sea salt

2 tablespoons water

Paprika or parsley for garnish


Instructions

  1. Prepare the garlic confit. Preheat oven to 250°F. Place garlic in a small ovenproof dish and cover with oil so cloves are submerged. Bake for 45 minutes or until cloves are golden and tender.

  2. Place the chickpeas, tahini, lemon juice, 2 tablespoons of the garlic confit oil*, baked garlic confit cloves, and salt in a high-speed blender. Blend until smooth, adding water as needed until creamy smooth or your desired consistency.

  3. Transfer to a serving plate and top with paprika or parsley for garnish.

Tips

*Store the left over garlic confit oil in a sealed container and refrigerate. Use in salad dressings, sauces, or drizzle on top pasta or pizza.
