Eliza's Millionaire Granola


The last time I made this granola, I ACCIDENTALLY bought $40 worth of macadamia nuts. Hence the name, Eliza's Millionaire Granola. If you don't want this recipe to cost your first born's tuition, feel free to substitute the macadamia nuts for almonds.


Sprinkle on top of greek yogurt with fresh fruit and prepare to be transported to your imaginary boyfriend's family estate in Muskoka.


Recipe

Prep time: 10 minutes

Cook time: 25 minutes

Makes: 6 cups


Ingredients

4 cups rolled oats

1 cup macadamia nuts

1 tablespoon cinnamon

1 teaspoon sea salt

1/2 cup melted coconut oil

1/3 cup maple syrup

2 teaspoons vanilla extract

1/3 cup unsweetened coconut flakes


Instructions

  1. Preheat the oven to 350° F. Line a baking sheet with parchment paper and set aside.

  2. In a mixing bowl, stir together oats, macadamia nuts, cinnamon, and sea salt until combined.

  3. In a separate bowl, stir together the melted coconut oil, maple syrup, and vanilla extract until combined. Pour the coconut oil mixture into the oats mixture and stir until combined.

  4. Spread the granola evenly on the prepared baking sheet. Bake in preheated oven for 20 minutes, stirring once halfway through. Remove from the oven, add the coconut, and stir again. Bake for 5 more minutes, until the granola is lightly toasted.

  5. Remove from the oven and allow granola to cool.

  6. Serve immediately or store in an airtight container at room temperature for up to one month.
